Forages that have been through a killing frost and are dead, supply little or nothing of linolenic acid for CLA. Omeg3 will be produced, but most likely you will not be finishing on deferred dry forage. If the killing frost is on winter annuals, winter annuals would not lose quliaty so fast and the quality will be no limiting of a good fatty acid profile. If animals expend some time on deferred forage but are finished on green grass for at least 45 days, CLA and Omega3 should not be compromised. Leaness could be excesive but that is a different matter.
